Papaya Salad

11/2 tablespoons palm sugar or jaggery
3/4 tamarind extract
2 cups green papaya, shredded
1/2 cup shredded carrot (optional)
6 green yard long beans chopped 1/2 inch piece
1 clove garlic
1 1/2 tablespoons fish sauce
1 tablespoon dried shrimp
1-2 green chili peppers

Mix all and crush lightly in a Motar Pastel. Then add 5-cherry tomatoes cut into quarters.
Let it rest for 5-10 minutes.
Add 2 tablespoons toasted peanuts or cashew bits; and serve with dinner rolls & butter
