Pasta Pomodoro

Heat butter & olive oil. Add chopped garlic . When fragrant add sliced zucchini & scallions.Add salt & pepper.

Remove zucchini out, add then skinned, de-seeded crushed tomato. Add 1tbs of  White cooking wine (a substitute is white Vinegar).  The add freshly cooked pasta, cooked in salt water. Add basil & zucchini. Serve hot with Parmesan cheese
