Veggie Taco


Cut  poblano peppers,zucchini,Red onions and mushrooms in long
stripes. Heat 1tsp of EVOO, add minced garlic & 1/4 jalapeno.When fragrant add veggies, in order specified every 30 sec. Then add fresh/frozen roasted corn (Trade Joe has it). And cook till veggie is done.

Warm corn taco tortillas with little oil on griddle//tawa. Add Lite Mexican-cheese blend(Trade Joe has it) inside soft corn tortillas. Add sauted veggies. Topped with sliced avocado

Serve with pico de & warm TJ's canned Black bean
